Banana & Oat Hotcakes
A terrific on-the-go snack for busy days. Ideal for lunchboxes as they are. Excellent source of dietary fibre. Good source of protein. Low in salt.

- 1 medium Egg
- 1 medium Banana mashed
- 1/2 cup wholegrain or rolled oats blitz in blender if you like smoother texture
- 1 tbsp oil
Topping options
- 1/4 cup unsweetened Greek or Natural yoghurt
- 1/4 cup fresh, canned or frozen fruit eg. berries, banana, kiwifruit, apricot, pears or more!
- 2 tbsp maple syrup, honey or jam
Mash banana in a medium sized bowl
Add egg and oats, and mix until combined
Heat oil in a large frying pan over medium heat
Spoon mix into a pan, making three even sized hotcakes
Cook for ~3 minutes, or until golden brown, and flip onto other side
Cook for a further 3-4 minutes and transfer onto a plate
Top with your favourite toppings. Our go-to toppings are Greek Yoghurt, blueberries and maple syrup or jam.
