Banana & Oat Hotcakes

A terrific on-the-go snack for busy days. Ideal for lunchboxes as they are. Excellent source of dietary fibre. Good source of protein. Low in salt.

Ingredients

  • 1 medium Egg
  • 1 medium Banana mashed
  • 1/2 cup wholegrain or rolled oats blitz in blender if you like smoother texture
  • 1 tbsp oil

Topping options

  • 1/4 cup unsweetened Greek or Natural yoghurt
  • 1/4 cup fresh, canned or frozen fruit eg. berries, banana, kiwifruit, apricot, pears or more!
  • 2 tbsp maple syrup, honey or jam

Instructions

  • Mash banana in a medium sized bowl
  • Add egg and oats, and mix until combined
  • Heat oil in a large frying pan over medium heat
  • Spoon mix into a pan, making three even sized hotcakes
  • Cook for ~3 minutes, or until golden brown, and flip onto other side
  • Cook for a further 3-4 minutes and transfer onto a plate
  • Top with your favourite toppings. Our go-to toppings are Greek Yoghurt, blueberries and maple syrup or jam.
