Name: Miso Mushroom and Tomato Pasta

Ingredients: 250 g lentil pasta (can substitute for any pulse pasta); 1 onion (diced); t heaped tsp minced garlic; 1/2 tsp dried rosemary (or a sprig of fresh finely chopped); 450 g mushrooms (sliced); 400 g can cherry tomatoes; 1/4 cup tomato paste; 1 tsp smoked paprika; 1 bunch asparagus (ends removed and chopped (optional)); 150 g spinach; 3 tbsp miso paste; 1 tsp apple cider vinegar; juice of a lemon; olive oil for cooking; pinch of salt
