One Pan Turkish Eggs

Infused with smoky tomato flavors and packed with protein our One Pan Turkish Eggs make the perfect brunch option for busy athletes.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 onion finely chopped
  • 2 cloves garlic finely chopped (or use ~1 tsp minced garlic)
  • 1 1/2 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 heaped Tbsp tomato paste
  • 400 g can chopped tomatoes
  • 4 large eggs
  • chili flakes (optional)
  • fresh coriander or parsley leaves to garnish

To Serve

  • plain greek or natural yoghurt
  • hummus
  • slices of freshly baked or toasted bread or pita bread

Instructions
 

  • Heat oil in a medium sized fry pan on medium heat. Cook onion and garlic until soft.
  • Add cumin and smoked paprika and cook until fragrant (approx. 1 minute).
  • Stir in tomato paste & chopped tomatoes. Simmer for ~5 minutes.
  • Next make a small well in the tomato sauce where you would like the first egg to go. Quickly but carefully crack the egg into the well. Repeat with the remaining eggs, spreading then out around the pan. Cover fry pan with a lid and steam until whites are just set (the steaming time will vary, can be anywhere from 2-5 mins). Alternatively if you don’t have a lid grill in the oven for a few mins until the whites are set.
  • To serve, spoon some of the tomato sauce and a couple of eggs onto each plate, sprinkle with chilli flakes if desired and season with salt & pepper. Serve with hummus, Greek yoghurt and bread on the side. Garnish with coriander or parsley and enjoy!
