San Choy Bao

Ingredients
  

  • 500 g lean pork mince can use turkey or chicken mince
  • 1 cup mushrooms, finely diced
  • 1 carrot, grated
  • 1 onion, diced
  • 1 can water chestnuts, chopped optional
  • 2 tbsp each soy sauce, oyster sauce and sweet chili sauce
  • 1 tbsp mirin
  • 2 tsp sesame oil
  • 1 tsp fish sauce
  • 2 cloves garlic
  • 2 cm fresh ginger, grated
  • neutral oil for frying

To serve

  • iceberg lettuce (cups)
  • vermicelli or brown rice cooked as per instructions
  • sliced vegetables e.g. carrot, cucumber, capsicum, cabbage
  • mung beans
  • fresh corriander
  • crushed peanuts
  • sesame seeds
  • lime wedges

Instructions
 

  • Mix pork with soy sauce, oyster sauce, sweet chili, mirin, fish sauce, sesame oil, garlic and ginger then set aside.
  • Prepare the rice or vermicelli as per directions on the packet.
  • Heat the oil in the pan and cook onion until softened. Add the mince, breaking it up with a wooden spoon, and continue to cook until the meat is done and the liquid has thickened. Remove from the heat and garnish with fresh coriander and sesame seeds.
  • Serve with sliced vegetables, rice cups, rice or noodles, peanuts, fresh herbs and lime wedges
